Spring has arrived, bringing with it longer days, warmer air, and an opportunity to spend more time in the sun.  If this spring has you longing for more time out-of-doors and less time in the kitchen, you're not alone.  The secret to nourishing your body when time is at a premium and you feel compelled to be on the go is to have ingredients on hand for a selection of easy go-to recipes.  This week, in honor of Earth Day, our health coach, Lynn has shared a favorite green recipe--easy pea soup!

 

 

 

Lynn Goodwin's Easy Pea Soup

2-10 oz bags of frozen peas

3 T ghee or butter

1 small onion, diced

4 cups of *vegetable broth

1/2 cup buttermilk

1/4 mint leaves

salt & pepper to taste

 

Heat butter or ghee in medium saucepan over medium heat.  Add onions and saute for just a few minutes until softened.  Add peas and broth.  Simmer until peas are cooked through. This will just take a few minutes.  Transfer soup to a blender, and mint leaves and puree.  Return to pot and stir in buttermilk.  Add in salt & pepper to taste. Serve.

 

*If I don't have homemade broth, I like to use vegetable bullion diluted in water.
